Okra Nuggets Recipe


We been thinking about this for a while... to feature foodies made from our local products within our blog. Since it's okra season here in Iloilo, we decided to kick off with recipes made from our locally produced okra.

Ingredients:

  • 10 pods okra, sliced in 1 inch pieces
  • 1 egg, beaten
  • 1/2 cup Bread Crumbs
  • 1/2 cup APF
  • Salt
  • Ground black pepper
  • 1/2 cup Olive/vegetable oil

Directions:

1. In a small bowl, soak okra in egg for 5 to 10 minutes. In a medium bowl, combine Bread crumbs, APF, salt, and pepper.

2. Heat oil in a large skillet over medium-high heat. Dredge okra in the Breading mixture, coating evenly. Carefully place okra in hot oil; stir continuously. Reduce heat to medium when okra first starts to brown, and cook until golden. Drain on paper towels. Serve while it's hot.

*To those who prefer a bit spicy version. You can add chilli flakes or powder to the breading mixture.
